Kelly's Irresistible Bran Muffins

Hi Friends:

This morning, I was craving for some bran muffins....So I went to my pantry and decided to make my favorite ones.  These are so delicious, you can't just have one....Below is the recipe:

Bran Muffins:

In a large mix bowl, beat 4 eggs along with 2 cups sugar.  Add 1 cup canola oil, mix well.  In separate bowl, mix 5 cups flour, 1 teas. salt, 5 teas. baking soda.  Mix well.  Slowly add the flour mixture into the egg mixture.  Blend in 1 (15 oz. Raisin Bran Cereal) along with 1 quart of buttermilk.  Stir until well mixed.

Add to muffin tins and bake at 400 degrees for 10-12 minutes.  These are good warm or at room temperature.  Recipe recommends serving with apple butter but I eat my plain and they are yummy!!!
Store batter into sealed containers for up to six weeks.

  2. They look yummy! I like that you can keep the batter for six weeks. That way I can make them for myself a little at a time. I'm sure my husband & kids would think I was trying to kill them if I gave them a bran muffin. LOL

  9. I love these!!! My Mom made them when I was little and every now and then I give em a try. Only problem is I eat wayyyy too many. Lol. Eat one for me :) Happy New Year!
