Cherry Clafouti - A Rustic French Dessert

I bought some wonderful cherries at the market and decided to make my favorite French dessert, Clafouti. While in France, I tried it and loved it ever since. It is a baked dessert consisting of cherries, and a custard type batter usually served warm and sprinkled with powdered confectioner sugar.

This is a very quick and easy dessert to prepare which includes eggs, flour, salt, and milk.  I added a splash of Amaretto to the batter and used my Emile Henry baking dish which I just buttered and lightly floured.  After cherries were pitted, I placed them in the baking dish and topped with the batter.  VOILA!

I used this cherry pitter that I also bought at the market.  I have to tell you this little device was wonderful.  It pits six cherries at a time!  You basically place cherries in the rounded tray of device and press down the handle.....So easy to use!

Now since it is ready to eat, would you care to have a slice?  Here is the recipe that I followed.  See here.

  5. Your Clafoutis looks perfect! I have never seen this cherry pitter; I use an old one from France that is one at a time, and this morning my hands were badly stained, but the pits were gone. Hope you had a wonderful 4th of July in your Coastal Cottage~
