Peach Muffins

Hello there,

How was your weekend?  It was a beautiful weekend here in SC with perfect weather.  I had a very, productive weekend with house cleaning and some baking.

I wanted to share with you a recipe that I have made for several years.  My peaches were just perfect for this recipe.

Peach Muffins:

3 cups flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt

1 1/4 cups canola oil
3 eggs, slightly beaten
2 cups sugar
2 cups peeled, pitted and chopped peaches

Preheat oven to 400 degrees.  Lightly grease muffin cups.

In a large bowl, mix flour, cinnamon, baking soda and salt.  In a separate bowl, mix oil, eggs and sugar. Stir the oil mixture into the flour mixture just until it is moist.  Fold in peaches gently.  Spoon mixture into prepared muffin cups.

Bake for 25 minutes or until toothpick inserted in the center comes out clean.  Cool muffins for 10 minutes before turning out onto wire racks.  Makes approximately 12-15 muffins depending on how full you fill the tins.

 
 
 
 










Enjoy!  These are great with a cup of coffee or for breakfast warmed up again.

New Pillows and Coffee Table Vignette

Hello there,

The weather is starting to remind me of fall here in SC with the nights getting cooler and a breeze in the air.  I wanted to share with you some new pillows that I just recently purchased and my coffee table vignette.





I am loving the tones of blue, brown, green and gold in the pillows.  They are perfect for the change of seasons.





I love adding fresh mums to my fall décor also.  I placed the mum on a textured wicker tray along with some mini pumpkins too.  A cloche with a chenille pumpkin is resting on some books.

Happy Fall - 2013

Happy Fall!




It is raining here in SC so it will be a great day to get out some of my fall decorations.  I always like to add some fall touches to my home with the colors of brown, orange, and plaids.  I will not be adding any fresh pumpkins to my porch until later due to the temps. The weather has been in the mid-80s which is just perfect for this time of year along with a little cool breeze.

Oh and of course I love burning my autumn scented candles, one of my favorite is pumpkin soufflé.

Breadboard Love



Hi There,

Lately I have had a crush on breadboards.  I have seen them in magazines, Etsy, Pinterest, and in shops.

Vintage breadsboards are my favorite though.  I have a couple in my home but would like to add on to my collection.  They are perfect for serving bread, cheese or appetizers or for hanging on walls in your home......

Zucchini Muffins and PB Metal Letter

Recently I ordered a wall letter artwork for my living room.  Pottery Barn had free shipping a few weeks ago on almost everything except furniture I believe.  So I bought some new towels for the hall bathroom and the letter art for my living room.

Here are some photos on where I hung the letter art.  I ordered the letter E for my last name and love how it looks against my light walls.






Today after making breakfast, I felt like making some type of bread using up some of my zucchini that I had bought at the Farmer's Market.

After going through several recipes, I found this one.  However I did not include the nuts or cranberries.


Ingredients
  • 3 cups grated fresh zucchini
  • 2/3 cup melted unsalted butter
  • 1 1/3 cup sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • Pinch salt
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup walnuts (optional)
  • 1 cup raisins or dried cranberries (optional)

Method

You don't need a mixer for this recipe.
1 Preheat the oven to 350°F (175°C). In a large bowl combine the sugar, eggs, and vanilla. Stir in the grated zucchini and then the melted butter. In a separate bowl, mix together the flour, baking soda, nutmeg, and cinnamon. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, raisins or cranberries if using.
2 Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Use a spoon to distribute the muffin dough equally among the cups, filling the cups up completely. Bake on the middle rack until muffins are golden brown, and the top of the muffins bounce back when you press on them, about 25 to 30 minutes. Test with a long toothpick or a thin bamboo skewer to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin let cool another 20 minutes.
Note, if you are including walnuts and dried fruit, you will likely have more batter than is needed for 12 muffins. I got about 14 muffins from this batch, and that included filling the muffin cups up as far as they could possibly go (above the surface of the muffin tin).

Yield: Makes 12-14 muffins.

Around the Home

Hope you are having a great week.  I thought I would share some things around my home with the inside and outside.

In the yard - check out my Lime Zingers.  I bought these at a local nursery for $6.00 and they have grown excessively.  I absolutely love them and want to get more for one particular place on the side of my house.  They are so easy to take care of also.






This is my Persian Lime, it looks so healthy however it has no limes as of yet!



Here is my Meyer's Lemon tree..  If you look closely to the left, you will see a green lemon ready to turn yellow.



Although I have not begun my decorating for the autumn season, (due to the heat) I found this owl wall hanging at a local store nearby.  I thought it would be a great idea to hang it on my front door.  So I just added jute to the back and tied it into a knot on both sides and it was that easy!  I love the look of the owl, don't you?  It looks especially great with my blue door......







On a recent trip to Charleston, I found this beautiful, floral throw!  The colors attracted me due to the bold colors in the flowers!  The greens, plums, turquoise were a perfect match for my master bedroom so it went into my cart!

The chippy, green wicker chair in my bedroom was a great place for this new purchase!

Becky's Patio

Hello, I wanted to share Becky's (my neighbor and friend) patio with you today.  Her son just recently installed her patio with brick. He did such a fabulous job! Here are some photos that I took today.

There is a lot of shade on her patio which I love for the SC climate!  I love how she has planted various shade perennials such as ferns amongst her bird bath!
