Beaufort Inn



Over the weekend, I dined at one of my favorite places in Beaufort, The Beaufort Inn.

The Victorian style hotel is located in the heart of the historical area within walking distance to unique shops, art galleries, restaurants and the Waterfront Park located nearby.  The dining room at the Inn serves a fabulous breakfast during the week and a brunch on Sunday.


 
 
 
 

 
 
 
 

 

Grits are always available on the breakfast menu along with fresh fruit, omelettes made to order, bacon, praline pecan french toast, orange juice, toasts, and coffee, tea.  By the way, their praline French toast is to die for!!!!

Upon entering the Inn, there is a beautiful veranda lined with wicker furniture and rocking chairs.  Guests can either stay at the Inn or there are many individual cottages within walking distance from the Inn.

If you are ever in the Beaufort, SC area, a visit to the Beaufort Inn is a must!  I promise ya!

Lasagna Soup

Since the holidays were filled with an abundance of food and homemade desserts, it was time for a hearty, homemade soup.   Recently I have seen this recipe for lasagna soup floating all around on the internet and thought I would try it. Yes -- it was wonderful and is a keeper for my recipe files.  It was  such a delicious soup and it went well with a warm, crispy baquette.



 








By the way, the best part of the soup was the melted ricotta cheese that is placed on top of the soup.  It really does remind you of lasagna.

P.S.  I used elbow noodles instead of the lasagna noodles,  added shredded fresh mozzarella cheese for the top and doubled the recipe.

A Beautiful Day in Charleston, SC

We decided to visit Charleston yesterday since the weather was absolutely beautiful.

Although I am finished all my holiday shopping, it never hurts to go visit one of my favorite stores, Anthropologie.  Everyone seemed to be in a rush trying to make their last minute purchases and the check out line was almost out to the front door!











We visited the Peninsula Grille for some holiday cheer!







Relaxed and ate lunch at the Waterfront Park on the Cooper River......

Then walked along the Battery Park.........

There were so many boats out enjoying the beautiful day too!
















 
And we even got a glimpse of SANTA!

Chocolate Crinkle Cookies


Hello There,

How is your week going so far?  I am actually completed all of my shopping and wrapping.  I actually am just baking some cookies during this week so I can relax and enjoy the holidays.

I made these chocolate crinkle cookies and wanted to share the recipe with you.  They are easy and so delicious!  Hope you enjoy them if you decide to make a batch!  Believe me, they are very quick and easy to make!









Chocolate Crinkle Cookies:
  • 1/2 cup confectioners' sugar
  • 1 2/3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, at room
      temperature
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
Directions:

Preheat an oven to 350°F. Grease 2 baking sheets with butter.

Put the confectioners' sugar into a bowl and set aside.

Mix the ingredients
In another bowl, using a wooden spoon, stir together the flour, cocoa, baking powder and salt. Set aside.

In a large bowl, using an electric mixer, beat the butter and sugar on medium speed until creamy, about 3 minutes. Turn off the mixer and scrape down the bowl with a rubber spatula. Add 1 egg and beat on medium speed until blended. Add the other egg and vanilla and beat until blended.

Turn off the mixer and add the flour mixture. Beat on low speed just until blended.

Using a tablespoon, scoop up a rounded spoonful of dough. Scrape the dough off the spoon into the palm of your other hand. Roll the dough into a ball. Roll the ball in the confectioners' sugar until covered. Place the balls on a prepared baking sheet. Repeat, spacing the balls about 2 inches apart.

When 1 baking sheet is full, put it in the oven and bake the cookies until they are crackled and puffed, 10 to 12 minutes.  Remove the baking sheet from the oven and set it on a wire rack for 15 minutes.

Makes about 24 cookies.
