Porch Swing Love

Hello There,

Hope you are having a great week.  Since Spring is around the corner, I am so ready to spend time on my front porch and enjoy the outside.  It is a wonderful feeling just listening to the birds chirping, observing the beautiful flowers in bloom and sipping a glass of iced tea.

Although I do not have a swing on my front porch, I have rockers instead.  So here are some photos of some porch swings that I especially love.  ENJOY!

Nan's Chicken Corn Soup

I learned many things from my grandmother (Nan) and one of them was how to cook.   One of my favorite things that I loved was her Chicken Corn Soup and loved her rice pudding which was also one of my favorites.

Today here in Beaufort, the weather was cloudy and it was perfect for her Chicken Corn Soup.  Here is how I make it:

4 Chicken Breasts
3 Stalks Celery, diced
4-5 medium potatoes, diced
1/2 large onion, diced
2 cans creamed corn

In large stock pot, boil chicken breasts along with the celery and onion until fork tender.  Remove chicken breasts and let cook.  Once cooled, pull apart chicken into bite size pieces and add back to broth.  Add 2 cans of creamed corn to the mixture.  Turn to medium heat.  Then add the diced potatoes at last and cook until fork tender.

I also top off this soup with the drop dumplings.  They are my favorite.

2 cups Bisquick
2/3 cup milk

Mix both ingredients and add by spoonfuls onto top of soup.  Cook dumplings 10 minutes covered with lid and another 10 minutes with lid.  Season with salt and pepper to taste.

My New Italian Linen Tablecloth from Italy

While vacationing in Siena, Tuscany back in October, I came across this beautiful linen tablecloth. I knew at first sight it was going back home with me to the US. The tablecloth came with six beautiful napkins. The pattern I chose was the pomegranate which stands for good luck in Italy. Can't you tell that I was a happy girl?

So now I want to show you close ups and  how it looks on my table......

The linens are made near Siena where I vacationed by the Bertozzi family.  They are hand stamped by original hand carved wooden molds.  Fast vegetable dyes are used on the linens which are permanent and fade resistant.

BTW - I wanted to include a pomegranate in the photos, however, I went to several grocery stores and they were not available.  I love the seeds which are a healthy snack and great in salads, too!  So instead, I have included a photo from the pomegranates that were on the property of the vineyard/bed and breakfast where we stayed in Tuscany.

Linzer Cookies for Valentine's Day

Hello There,

Since Valentine's Day is this Friday, I made a batch of my favorite Linzer cookies.  I have had this recipe for years and it is one of my favorites.   This cookie is perfect for the special day!

Just recently when I was shopping in Hilton Head Island, I found a Linzer cookie cutter set at World Market.  Before finding the cookie cutter set, I always used round cookie cutters.  Now I have a whole set with different inserts. 

Linzer Cookies

1 1/3 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1 stick butter (softened)
1 egg
1 teaspoon vanilla
Powdered sugar
Seedless raspberry or apricot jam

In small bowl, combine flour, baking powder and salt, set aside.

Beat granulated sugar and butter in mixing bowl on medium speed until light and fluffy.  Beat in egg and vanilla.  Gradually add flour mixture on low speed until dough forms.

Divide in half and chill for at least 2 hours.

Roll out 1/2 of dough to 3/16 inch thick.  Cut equal amounts of cookies with cutter and insert and make tops without the insert to make the bottoms of the cookie.  Repeat with remainder of dough.

Bake at 375 for 7-9 minutes.  Remove to cooling rack, and cool completely.

Dust tops of cookies with confectioner sugar.  Spread about 1 teaspoon of jam on each cookie bottom.  Place tops over bottoms to create a sandwich type cookie.

This recipe makes about 1 1/2 dozen so I usually double this recipe.

They are great with a glass of milk, of course in a mason jar!

Some Target Finds

Recently I visited Target which is one of my favorite stores to find fun things for the home.  I never leave the store without a bag in my hand.

I usually head to the housewares section, bathroom section, gardening and lamp section.

I first visited the lamp department, and found a lamp base that was on sale for $15.00, I already bought this cute chevron style lampshade (also on sale for $10.00) and knew it was the correct base for it.  I love the Threshold lamps and lampshades and how you can mix and match shades and lamp bases.

The next visit was the pillow department where there were tons of pillows.....did I tell you that I have a pillow fetish?  Well here it is, a round pillow with assorted fabric patches.  I love how it looks on this chair on my landing.

And look what I paid for this pretty pillow, yes $10.48.  SCORE!!!

I also picked up this area rug at TJ Maxx, which I found a place to for it in the upstairs hallway.

Newly Painted Bathroom Vanity - Before and After Photos

Hello There,

I just recently did a little paint job on my bathroom vanity in my hall bath.  It was the original vanity - (boring white) - so I had some leftover paint from another project that I used to make this change.

Here is the before photos.  This room was very difficult to photograph, as it is not a large room and has minimal natural light.




I bought these mercury glass knobs at PB on sale.

Overall, I like the small change to the vanity.  The overall cost for this change was only $10.00 since I already had the paint and the knobs for PB were on sale.  I love when you can make a small change to your home without breaking the bank!
